My maternal grandmother, a descendant of the
Maroons, an indigenous and almost extinct ethnic
group of Jamaica, who originated in West Africa,
fried slices of carefully-selected ripe plantains in
coconut oil which she called “dodo”.

pepper, ginger, garlic, Jamaican allspice (pimento),
wrapped it in brown paper and let it ferment for
